Spinach Dip!

How to make Spinach Dip ...

---

1. Chop up 3 stalks of Green Onions aka Spring Onions.

2. Defrost and squeeze as much water as possible from a box of Chopped Frozen Spinach.

---

3. Add 16oz of Sour Cream.

---

4. 1 Cup of HELLMANN'S Mayo ... yup, its the best :)

5. Place everything in a bowl ...

6. Add a pack of Knorr Vegetable Mix, thanks to Yuchien :) or the local option is by Lipton but this is the original!

7. Mix well and chill it overnight for best results! Bon appétit ...

Guilt trip or just being nice?

My mom does things sometimes that are so nice that I just can't help feeling guily/loved/suspicious/grateful/appreciative.....

It might sound like a simple thing but it meant alot to me. Well, u all know that my daily breakfast is cereal, Post's Banana Nut Crunch, and coffee. Its standard, I have been eating it almost everyday since I came home. And I get grumpy if I don't get a chance to eat it because my parents cooked something else.

Anyway, I usually eat a bowl of it and a box would last me about 4 1/2 days. My mom has been buying it for me but I do get it sometimes when I know I'm running out and my mom hasn't. I don't ask my mom to get it as she tends to complain. She has always nagged about how exp it is and yes, it is more exp than the regular cereals. It comes up to about S$1.20 for each bowl. Well, sometimes when they want to go out to eat, I would tell my mom, its ok, I'll just stay home and eat my cereal, it's only then that its "cheaper". I have tried paying for it when we go to the store together but she never takes my $ but yet she will continue to complain that its exp. I don't understand her at all.....

I guess it is my "safe" food cos I NEVER gain weight eating it. Its nutritious, crunchy, sweet but not overly so, there's walnuts, oat clusters, the yummy banana taste .... It's everything good in a bowl!

Well, my mom's last purchase of 5 boxes were dwindling down to the last box. I was lazy to go get more and since I was going out on Wed, decided that I would get some then. So began cereal rationing .... I wanted to have it for dinner last nite but I knew that that meant no cereal on Wed morn so searched for something else instead.

Anyway, I came down this morning and my mom had gone out earlier and there was a brand new box of cereal on the table! My mom said she got me one box to tie me over cos its expensive now (she's waiting for it to go on sale).

This is not the first time she has kept track of my cereal and bought me some just as I was about to finish. Its time like that that I feel guilty for not doing something my mom asks me to do or when I complain about the tons of stuff my mom cooks, "yelling" at her when she buys stuff for me to eat which I would eat if not for my food paranoia.

Wonder if I can stretch a box out to 5 days?

Yippee! I'm watching the musical with Huiyi on 3rd Apr @ 8pm :)

Next event I want to go to is ...

Singapore Grand Prix!

It has always been something I wanted to watch in real life. I wanted to go to the one in Indianapolis Speedway, Indiana but I could not find someone to go along and it was going to be very expensive doing it alone with all the driving, tic and motel stay.

Anyone? It's ONLY $168 for a 3 days pass .... or I could go higher .. haha

7th Day of the Lunar Calendar

We celebrate the Lunar New Year for 15 days and on the 7th day is what they call 人日, which basically means "people's day" and on this day, its everyone's bday.

Anway, we decided to have dinner at home with my bro and Ash. Ash was a little late as it was that day that the trains decided to malfunction. She had to make a detour and then catch a bus after giving up on waiting for it to be fixed. They kept announcing that the trains would resume in 5 mins. If anyone's interested, she was interviewed about it in the newspapers the following day.

She finally arrived and dinner was underway ....

Ok, this was the star .... 盆菜 (Pen Cai) There Albalone, Roast Pork, "Hair" (The black thing is a type of sea weed), Dried Oysters and Mushrooms.

And my fave ... Yusheng again! The 7th day is when it is actually supposed to be eaten.

Roast Chicken that my dad de-boned. Slightly overdone but just the way I like it. Carbon .. yum!

Steamed Sea Bass with Fried Shallots and Garlic.

Pork Rib Soup with Pig Stomach.

Broccoli with Scallop. Wish my mom didn't coat the scallops with flour b4 she fried them ... but still nice.

And for dessert ... Chocolate Cake that Ash bought!

Ate so much .... that's it, that is going my last big meal until my sis's bday on 12th Mar. I hate the holidays because of all the temptation and my lack of will....

4th Day of the Lunar New Year

I was supposed to be just a short visiting day to my friends' hse but my mom told me 2 days before that we would be having family get together/potluck that day too and that we would visit my Grandma too.

So the plan was to visit my Grandma in the morning at 11am, go to my uncle's at noon and then I told my mom that I have to be at my friends' at 2.30pm the latest. So off we went ...

On the way to my Grandma's, LC called me to invite us over to her place in the evening. It was a last min thing that they decided to do. But I was warned that it would be a simple get together as they themselves have to go visiting b4.

Did not stay long at my Grandma as we had to rush off. Did not take any pics there as they had just woken up :)

Here's at my uncle's hse and I'm helping my niece braid her hair. I was kinda afraid to pull to hard in case she started crying. Which meant that the braiding was a little messy. Oh ... and they were rushing me to "lo hei"

Hung ard for awhile but at 2pm, I told my mom that we have to make a move. My friends' hse was in the same area and my mom told me that she would drop me off. However, my mom took forever to leave, first she had to eat more, then she had to tell everyone what to take back as leftovers, then pack her own leftovers, help my aunt pack her leftovers ....

ARGH!!

It was abt 2.35pm when we finally stepped out of the hse and Huiyi had already called to asked where I was.

It was off to Christine and TY's hse and guess what? More Yusheng! My sis decided to tag along as she did not want to be bored at home ...

We left there at about 4.30pm and headed down to Orchard. Christine and TY had to do their own visiting and we weren't expected at LC and GX's until past 7pm. Ben needed to run some errands and we decided to grab some dinner there too. Oh, and we got to take a ride in Ben spanking new car!

We headed to the M1 shop at Paragon and while Ben was doing his thing, Huiyi, my sis and I were looking at the new phones. Ben's problem could not be solved but it was not a wasted trip as Huiyi got a new phone! All thanks to Ben, she managed to get a $70 voucher and so she paid less than $30 for her new phone!

Italian Salad. It has been a long time since I had a Italian salad .... brought back memories ....

Umm, Penne with Mushrooms in a Alfredo Sauce. This was yummy, nice and creamy.

My fave ... Pizza with Pepperoni and Italian Sausage. The dough was a herb seasoned dough which made it so much more tasty. But its alot of carbs :(

By the time we left town, it was already past 7pm. We headed to LC and GX's expecting dessert and we were not disappointed. Evon joined us there after she got done with her friends.

LC bought some cookies from the Cookie Museum and they were yummy! We were told to eat them in a specific order so as to get the best experience.

Next was Cranberries and Lychee (this is a fruit too). Another winner!

Next is Cranberries, Orange Chocolate and Lotus Seed Cookies. I would have liked them even better without the Orange Chocolate .. haha, I hate Orange Chocolate.

Ok, this was one of the unique ones. Laksa Cookies. Laksa is a local noodle dish in a soup of spices and coconut milk. There's no noodles in the cookies, don't worry. Its just the spices and coconut flavor. U have to wait awhile before the full flavor hits yr mouth. Nice, but my fave is ....

Hae Bee Hiam! Haha, I love this! It was spicy and u could taste the sambal shrimp flavor. This was my sis favorite too and LC gave her some to take home which she would have to share with ME!

We also had Chocolate Fondue and some Strawberry Cheesecake, subsitute for not being able to buy fresh strawberries.

Drinks was served in this fancy Felix Stark partyware. U can carry yr champange and hors devours in one hand .. so atas!

By the time Ben dropped my sis and I home, I was so tired and the wine put me to sleep the moment I hit the sheets .... YAWN!

Trip to the A&E

Relax, don't freak out, it wasn't me, it was my dad but he's fine, it was kinda minor. Here's what happened ....

It was about 4pm and my mom came rushing in to my room and said that we have to send my dad to the emergency room. I was shocked and asked my mom what happened. She said that my dad cut his knee on some glass and has to have some stitches.

I quickly got dressed and went down only to see my dad hobbling around with a piece of tissue covering his wound. He said that it did not hurt and that it has stopped bleeding. However, because the cut was quite deep, he needed stitches. He even let my sis and I glance at the wound ... yup, it was quite deep.

We drove there and my mom dropped us off as she went to park the car. My sis and I walked my dad in and I helped him register.

They asked if one of us wanted to follow my dad in and since I was the only one to have my IC with me, I told them I would go in with my dad. My mom arrived a few moments later but she did not want to do it, so I was given a blue paper around my wrist and proceeded to push my dad (on a wheelchair) into the A&E.

It was a pretty quiet day, about a hand full of ppl waiting with us. I went to pay the $55 admission fee (my dad got a $25 discount for being a regular blood donor) and then waited for the dr. to call his name.

Everyone asked him what happened and all of them spoke in Mandarin first. It was kinda irritating ... I guess he has the "speak mandarin uncle" look. Well, he was trying to set up a new TV on a wood and glass cabinet. But while puting it on, the corner of the glass broke off and he walked into it.

They said that we had to go to have a X-Ray done to check for any glass fragments in the knee. I pushed my dad and I was so worried that I would hit his raised knee while making corners. Thank god I didn't.

After the X-Ray was done, the dr. had a look at it and found nothing embedded. It was then that I had a longer look at the wound and saw the layer of fat beneath the skin. Quite bad ....

Next stop, Operating Theater. I wasn't allowed it which I was dissapointed as I wanted to see them do the stitching. Yes, I am weird that way.

Anway, it was then that I took these pics. It was kinda boring waiting alone and I had my camera with me. My dad finally came out and said that he had to have 4 stitches inside and 8 outside.

Wow, that's a DOZEN stitches!

All in all, it took us about 1-1 1/2 hrs from arrival to departure. My dad got 3 days MC but unfortunately he could not find someone to cover his shift and have to go to work. He has no trouble walking but I just hope that he takes it a little easy.

Oh, and guess where we stopped on the way home? Buy 4D! Haha .....
